Brussel Sprout Salad

This light, refreshing salad is the perfect accompaniment to a great cut of meat. I love this with fish, chicken or beef! This is packed with flavor and does not disappoint!

Ingredients:

  • 1 bag shaved brussel sprouts

  • ¾ tsp sea salt

  • ½ tsp black pepper

  • 2 tbsp avocado oil (or olive oil)

  • ½ cup shredded parmesan cheese

  • Juice of 1 lemon

  • ½ ripe avocado (optional)

  • Truffle oil or Truffle salt 

  • Garlic powder to taste (optional)

Instructions:

  1. In a food processor, empty the bag of shaved brussel sprouts.

  2. Add salt, pepper, lemon juice, avocado oil and parmesan cheese.

  3. Pulse quickly 1-2 times to mix.  DO NOT OVER MIX!

  4. Taste. The mixture should be flavorful with a hint of lemon and salt.

  5. Add the ripe, sliced avocado, the truffle salt or truffle oil and (garlic powder, if using). 

  6. Pulse in the food processor another 1-2 times until mixed. DO NOT OVER MIX.

  7. Taste and adjust seasonings as needed.

  8. Serve as a side or serve with crackers.
